I have a manual for the 2304 jukebox but I can't find any mention of how to adjust the Automatic Volume Control bias pot. I re-capped and replaced some resistors and tubes in the amp. The schematic calls this out as R34, 500K BIAS CONTROL. I'm hoping I don't need a special test record or something like that.

Don't worry about that pot. Set it mid-range. It only slightly affects the attenuation curve and without the sort of test setup I use, you won't detect any meaningful changes.
The main gripe I had with all those 50's Wurlitzer AGC's was that were so damn slow on both attack and release. If a record get more than a few db louder during play it took several seconds for the AGC to pull the gain back down. I modded them extensively omitting one time-constant cap, a resistor and added a diode. Probably not worth it for home use.
