I have a slight issue that when the last selection of a credit is selected the lights, and select motor jitters, like the contact is too close, or a wiper is at the edge of connecting the select motor to power, like it is bouncing at the edge of a contact. At first I thought it was the credit cam, so I checked that, and that was OK it may be the selector wheel. but I'm not sure.

It does look like it would be an issue with the coin switch when it has reached the last selection. I don't have a manual for that particular model but on the 5210 and 5250 models, the selection motor and select light power return is routed via the coin switches. There are two switches in parallel so it would appear that one may be misadjusted or dirty.

I double checked the one at the top of the credit unit, do you know where the other one is?

Having taken another look at the schematic, what I thought was a second coin switch is in fact a key switch. I think, looking at the 5210 manual, it must be something related to the coin counters. Do you have a manual to refer to?

I don't think the schematic will help that much because electrically it's quite straightforward. I think it's more likely to be a mechanical type issue related to the coin counters.

Is it just the 'Select' light that is jittering? Or is it also the general illumination?

The wiper motor is jittering causing all of the lights to flicker after the last selection is selected, like the last contact is too close that shuts off the motor when it's done with the last selection.

I'm having trouble grasping the exact sequence of your issue.
Does the box run normally when there are still available credits?
Once it starts 'jittering' does it stop at the end of the selection cycle? Or is it continuous?
A step by step description may help.... or a video.

It works normally, except when the last credit is used by the last selection, then the motor jitters a 2or 3 times and stops
